You should not be building a "tank" monk. Monks in Pathfinder don't have to sacrifice damage in order to be hard to kill, and a melee character who doesn't deal damage reliable or cast spells is a waste of a party slot. Second, all of the varieties are weaker than a STR-based regular Monk.

Focus str and go dragon style. (at least 2 tier) to get the awesome. Str bonus to Fist. Dex only gives extra ac and for scald fist is secondary since Charisma also gives AC. OTOH if you want a TWF DPS build, you don't need so much monk and extra rogue levels for more sneak attacks would be better. E.g., monk 1 / Knife Master 19 or monk 1 / KM 3 / Vivisectionist 16 - 10d8 sneak attacks with small blades and Flurry of Blows means an extra attack from your main hand if you equip a sai or kama.
I´m not sure but you could make a viv scaled fist as well, with feral mutagen and wolf cloak for trips. Would have stats more spread out tho because viv needs int for spells. There´s also a Dragon Disciple Monk build. With either 1 lv of monk/rest sorc + Dragon Disciple or 1 sorc/rest monk+DD. 2.
Best damagers: Ekundayuo, nok nok. But honestly they all can do adequate damage depending on their builds. For example I use Amiri as a kukri slayer with free shatter defense and dreadful carnage and she is not that much worse damage wise than Nok Nok but can also be enlarged for more reach and provides better utility.
